Seared Chicken Quarters and Grilled Onions

Pulled out one of my frozen packages of chicken quarters from the fridge, and they were a little frozen still, so I decided to take advantage and take the bones out.  This allows the skin to lay flat when cooked in a hot cast iron pan, so the whole thing gets very crispy.  We had four onions left over this week, so a quick grilled onion side dish seemed like the perfect choice.  We had this with our homemade SMASH beer (Singe Malt and Single Hop beer- Vienna Malt and East Kent Golding hops).  A perfect complement to the meal since it was a little bitter and it help cut through the sweetness of the onions and the fattiness of the chicken. 



One of the problems with Lubbock is the lack of chefs. We have lots of places to eat, and some of them are good, but I am hard pressed to find well cooked meat here.  Even at the nicer places, the chickens is overcooked.  The only way your going to guarantee a well cooked piece of chicken or steak is to cook it yourself.  The steak, I know is odd.  It's Texas.  We should have world class steak.  We do.  You just have to cook it yourself.
