Broadway bikes

I've been looking for a place in Lubbock where I could show the most number of bikes at once. Apparently Broadway Bikes is it.

Lubbock is very friendly to bikes because of the campuses and the flat roads.

Fried rice with imitation crab meat

Heat wok till it smokes a little add
2 tbs peanut oil
Then add one egg
Add half an onion diced and mix till its translucent
Add precooked rice
Mix for a while
Add 2 tbs soy sauce
Add a little ginger powder and garlic powder
Add frozen peas and carrots and imitation crab meat
Cook till it looks delicious
Eat it...

Chicken cordon bleu

By sheer chance I happen to have two chicken breasts, ham, awesome horseradish cheese , and panko breadcrumbs all at once. I had to make chicken cordon blew.  I should have cut it in half for the picture, but the cheese would run out.

The Lubbock Haboob (Strong Sand storm)

We got in the Washington Post for this one.

I was outside with the dog when it started coming in.  I called the dog in, shut the door behind her just as the sand storm hit.  It went from sunny to pitch black in a minute.

Our local news coverage got a good bit of the action.

Easy Seafood Paella

Easy Seafood Paella.  We were fortunate to be able to find everything we needed for this recipe.  The chorizo was a surpise find.  The clames were a luck find.  There was only a pound left, and most of them were bad so we had to throw them out.  Even the good ones had little taste.  I think it would have been better with just shrimp, but what's paella without clams?

Deviled eggs


Another Avec Eric recipe, Deviled Eggs with Smoked Salmon.  This was amazing, and a very different flavor.  With as hard as it is to get good fish in town, the smoked salmon was a great way to get high quality fish without having to worry about freshness.
